Cilantro Lime Rice

  • 2 tablespoons butter

  • 1 1/4 cups basmati rice

  • 2 cups chicken broth

  • 1/4 cup lime juice

  • 1/4 cup finely chopped cilantro

  • 1/2 teaspoon salt

  • 1/2 teaspoon cumin


  1. In a saucepan over medium-high heat combine the butter and dry, uncooked rice. Stir together to toast the rice until the butter has melted.

  2. Once butter has melted and rice smells fragrant (about 2-3 minutes) add the remaining ingredients (expect the cilantro) and stir to combine.

  3. Bring to a boil and then cover with lid and turn heat down to low. Let simmer for 15-20 minutes. All of the liquid should be absorbed.

  4. Fluff with fork, mix in cilantro and serve!
