Cinnamon Apple Breakfast Oats
Recipe adapted from SimplyQuinoa
Ingredients
1/2 cup whole oats
1/2 cups water or unsweetened almond milk
2 large apples (i prefer honeycrisp)
2 teaspoons cinnamon
1 tsp of brown sugar
Maple Syrup to taste
Instructions
1. Peel and core both apples. Chop them into small bite-sized pieces.
2. Add apples to sauce pan and cover with water. Boil apples until slightly soft (5 minutes or so)
3. Drain water from pan. Add cinnamon and brown sugar. Stir to mix and set aside*. I recommend doing this in the hot pan so the brown sugar melts.
4. Cook 1/2 cup of oatmeal
5. Add apples as desired
6. Drizzle with maple syrup and sprinkle with additional cinnamon (if desired). And enjoy!
*Note: cooking two large apples yields a large amount. I usually save and add to my oatmeal throughout the week.
