Crock Pot Chicken Chili

I posted this to Instagram the other day and the recipe has been highly requested!


Ingredients:

  • 2 chicken breasts

  • 8 oz green chiles

  • 2 can Pinto Beans

  • 1/2 yellow onion

  • 2 cups low sodium chicken broth (or vegetable broth)

  • 1 tsp pepper

  • 1 tsp garlic salt

  • 1 tsp cayenne pepper

Directions:

  1. Place chicken breasts in the crockpot and set on high.

  2. Cover the chicken with the seasonings. Then, top the chicken with the chiles and onion

  3. Drain and rinse the cans on pinto beans and add to the crockpot

  4. Top everything with chicken broth. Cover and cook for 4 hours.

  5. Once cooked, remove the chicken and shred. Then, mix back into the crockpot and you're ready to serve!

This recipe makes 6-8 servings (depending on the size of the chicken breasts).

I also add cotija cheese, sliced avocado, sour cream, and cabbage on top of mine!
