Homemade Oatmeal Bars

I haven't made these in awhile. I used to love making these for during my meal preps to have for breakfasts during the week.


Ingredients:

  • 2.5 cups oats

  • 1/3 cup chocolate chips

  • 1/2 tsp salt

  • 1/3 cup brown sugar

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 2 cups milk

  • 1 large egg

  • 2 tbsp melted butter

  • 1 cup raspberries or strawberries

  • 1 cup blueberries

  • 1 large banana

Instructions:

  1. Preheat oven to 375. Spray an 8x11 dish with cooking spray

  2. In a large bowl, mix the dry ingredients (oats, brown sugar, baking powder, cinnamon salt, and half of the choc chips) in a large bowl. Add in half the berries and stir to combine.

  3. Pour evenly into the baking dish. Slice the banana and add on top of the mix. Add the rest of the berries and chocolate chips.

  4. In a separate bowl, combine the wet ingredients and whisk thoroughly. Pour overtop of the mixture in the baking dish to ensure everything is soaked evenly.

  5. Bake for 30-40 minutes until golden brown

This recipe makes 9 servings!
