Vegan Flautas

I find myself making this every week, but they're so good!


Ingredients:

  • 2 cans chickpeas, drained and rinsed

  • 1 red bell pepper

  • 1 jalapeño

  • 3 green onions

  • 5 tbsp vegan mayo (or regular if you're not vegan!)

  • handful of fresh cilantro

  • 2 tbsp lime juice (or juice from 1 lime)

  • paprika, black pepper, salt, garlic powder to your liking

  • 12-15 small tortillas (I used Mission fajita flour tortillas)

Directions:

  1. pre-heat oven to 350 F

  2. Mash chickpeas in a medium size bowl

  3. Dice bell pepper, onion and jalapeno and add to chickpeas

  4. Chop up cilantro and add into the mix

  5. Add mayo, lime juice, and seasonings and stir all together

  6. Add a large spoonful to each tortilla and roll up tightly.

  7. Place rolled tortillas on a baking sheet and bake in the over for 15 minutes

Note:

Because you are not frying these, they are healthier than regular flautas!

I usually eat these with salsa on top. 3 flautas is one serving!
